This unexpected and delicious pudding is little known outside Arabic countries, but is well worth discovering. Originally developed as a way of using up ripe bananas and day-old flatbreads, you can make this with any bread that’s looking a bit dry, helping you to fight food waste in the most delicious way. Mashed bananas and breadcrumbs are cooked briefly with ghee and macadamia cream before folding through chopped macadamias and then topping with extra cream, medjool dates, macadamias and a drizzle of honey. Enjoy this as a healthy yet indulgent breakfast, afternoon pick-me-up, or simple dessert.

Ingredients
- 2 ripe bananas
- 2 thick slices wholemeal bread sourdough is especially tasty
- 2 tsp ghee or butter
- ¼ cup thickened macadamia cream or fresh cream
- ½ tsp ground cinnamon
- Pinch of salt flakes
- 50 g raw macadamias roasted and roughly chopped
To serve
- Extra thickened macadamia cream or fresh cream
- 2 medjool dates sliced into 8 lengthways
- 20 g raw macadamias roasted and roughly chopped
- Honey
Instructions
- Peel the bananas, slice into a medium bowl, and use a fork to mash until smooth. Tear the bread into small pieces, place in the bowl of your food processor, and blitz to make breadcrumbs. You want roughly the same amount of banana and breadcrumbs. Add the breadcrumbs to the bananas and mix until well combined.
- Melt the ghee in a nonstick frying pan over medium heat. Add the banana-breadcrumb mixture, stir through the macadamia cream, cinnamon and salt. Cook for a few minutes, just until the mixture is heated through. Turn off the heat and stir in the chopped macadamias.
- Spoon into bowls while still warm. Dollop extra macadamia cream on top, and arrange the sliced dates and macadamias decoratively over the cream. If you have a sweet tooth, drizzle with a little runny honey before serving.
Notes
