Macadamia cream fruit cups

These macadamia cream fruit cups are a delightful mix of creamy, tangy, and juicy flavours. The silky macadamia cream pairs beautifully with finger lime jelly.
This summer version features peaches, plums, and raspberries, but you can easily swap in whatever fruit is in season. Try pears, bananas, and rhubarb in the cooler months, or mango, cherries, and passionfruit in summer.
Top it off with roasted macadamia pieces for the perfect crunch, and you have a dessert that’s light, luscious, and effortlessly elegant.

Ingredients
  

Finger lime jelly

  • 250 g finger limes
  • 1 green apple
  • 600 ml water
  • 125 g caster sugar

Macadamia cream

  • 1 cup macadamias
  • ½ cup macadamia milk
  • 1 date
  • ½ teaspoon vanilla essence

To serve

  • 4 juicy ripe peaches halved and cut into eighths
  • 4 juicy ripe plums halved and cut in to eighths
  • 1 punnet raspberries
  • ¼ cup macadamia pieces roasted

Instructions
 

  • For the finger lime jelly, halve each finger lime and scrape out the seeds. Reserve the seeds for another use and place the skins in a medium sized saucepan. Grate the apple, including the skin and seeds, and place in the saucepan with the water. Bring to the boil and simmer steadily for 30 minutes. Strain the liquid into a clean saucepan, pressing gently on the solids to extract as much liquid as possible but avoiding squeezing solids into the mixture. Discard the solids. Add the sugar to the liquid and stir over a low heat to dissolve. Bring the mixture to the boil, reduce heat slightly and boil at a steady simmer for 5-10 minutes, until the liquid has reduced by half. Line a small dish (about 15-20cm round or square) with baking paper and pour the jelly in. Allow to set at room temperature. Refrigerate until ready to serve.
  • For the macadamia cream, place all ingredients in a high speed blender and blend until completely smooth. Pour in to a bowl and refrigerate until ready to serve.
  • To serve, layer pieces of finger lime jelly, tablespoons of macadamia cream and fruit into glasses. Sprinkle with roasted macadamia pieces and serve.

Notes

Can’t find finger limes? No worries—the fruit cups are just as delicious without the jelly, letting the rich macadamia cream and fresh fruit shine.
