Macadamia pesto
1cupmacadamiasroasted
2cupsbasil leavestightly packed
1/4cupparmesan cheesegrated
1/3cupmacadamia oil
4-6clovesgarlic
juice of 1 lemon
salt and pepperto taste
Macadamia hummus
1/2cupmacadamiasroasted
2cupschickpeascooked, drained
2tbspmacadamia oil
3tbspwater
1tbsplemon juice
1tspminced garlic
10medium basil leaves
salt and pepperto taste
Macadamia tapenade
100gblack kalamata olives
2tbspmacadamia oil
2salted anchoviesoptional
50gmacadamias
Small handfulflat leaf parsley leaves
1long red chillide-seeded and roughly chopped
Instructions
Macadamia pesto
Blend all ingredients together in a food processor until finely chopped
Macadamia hummus
Place all ingredients in a food processor and puree until smooth
Macadamia tapenade
Using a pestle and mortar gradually incorporate all the ingredients into a paste. If you use a food processor, add all ingredients plus an extra tablespoon of macadamia oil and pulse until you get the consistency you desire.
