Try these single step macadamia snack recipes

When the munchies strike, it’s good to have some quick, healthy recipes on hand. 

These snack ideas are easily whipped up in a food processor or mixing bowl so you can have a healthy, macadamia-style treat ready in minutes.

Hemp and macadamia bliss balls

Great with a cup of tea and packed with goodness, these treats are easy to make in a food processor. Process 3 cups of roasted macadamias, 3 tablespoons of vanilla protein powder, 1 tablespoon of cacao and a pinch of ground cinnamon in a food processor. Add 1 tablespoon of vanilla extract and 16 dates then process again until the mix starts to come together. Add 1-2 teaspoons of water if needed so that mixture forms a soft ball. Remove from the food processor and form into balls. Roll in coconut, goji berries or cacao and store in the fridge for up to 4 weeks.

Macadamia hummus

In a food processor, puree 1/2 cup roasted macadamias, 2 cups cooked chickpeas, 2 tablespoons of macadamia oil, 1 tablespoons of lemon juice, 3 tablespoons of water, 1 teaspoon of minced garlic and 10 medium basil leaves until smooth. Add salt and pepper to taste. Grab your carrot sticks or rice crackers and you have a healthy snack ready to go!

Macadamia ‘mascarpone’

This made in minutes recipe treat is perfect with pancakes and French toast. Simply process 1/2 cup macadamia butter, 250g silken or soft tofu, 2 tablespoons of maple syrup and 1 teaspoon vanilla essence until smooth. Refrigerate until you are ready to serve.

Dairy free macadamia ‘mascarpone’

Macadamia chocolate crackles

All you need is a mixing bowl to make these crackly, crunchy delights, and this melt and mix recipe takes mere seconds to whip up. Mix 1.5 cups of puffed rice, 1.5 cups of roasted and roughly chopped macadamias, 1.5 cups desiccated coconut, 1.5 cups of sifted icing sugar, half a cup of raw cacao or cocoa powder and 200 ml melted coconut oil in a large bowl. Evenly divide the mixture into twelve cupcake cases and refrigerate until set.

Smoked trout and macadamia spread

Get a boost of B vitamins and healthy fats from this delicious savoury spread. It’s great on fresh bread with pickles. Simply place a small piece of smoked trout and a quarter of a cup of macadamias in the bowl of a food processor with 2 tablespoons of lemon juice and process to combine. Season to taste with salt and black pepper and extra lemon juice if desired. Store in the refrigerator in an airtight container. Serve in a small bowl with fresh or toasted bread and pickled cucumbers.
