Ingredients

Macadamia biscuits

  • 1 cup sugar caster
  • cups self-raising flour
  • ¼ cup macadamias chopped
  • 125 g butter melted
  • 1 egg lightly beaten

Icing

  • 125 g butter softened
  • 2 cups sugar icing
  • food dye red

To decorate

  • 8 macadamias cut into pieces (for the teeth)
  • red gel icing pen
  • 12 macadamias cut in half (for the eyes)
  • edible pen

Instructions

For the Biscuits

  • Preheat oven to 180°C. Line a large baking tray with baking paper. Combine the sugar, flour and macadamias in a bowl. Stir in the melted butter and egg until the mixture is combined. Gently pat heaped teaspoons of mixture into 24 small flat 3cm round x 1cm thick discs and place on the tray, at least 3cm apart. Bake for 10-13 minutes, until golden. Remove from the oven and cool on the tray for 5 minutes before placing on a wire rack to cool completely.

For the Icing

  • Place the butter into a large bowl and beat until completely pale. Stir in the icing sugar until the mixture is smooth. Add red food dye to achieve the deepest red colour possible.

To Decorate

  • Top one biscuit with the blood red icing filling. Using macadamia pieces, arrange fangy monster teeth along the front edge of the biscuit and drizzle with a little red gel icing. Top with another biscuit, wedging the back of the biscuit into the icing. Use a small amount of icing to stick two macadamia eyes on top. Draw small dots in the middle of the eyes with the edible pen.
