Five favourite macadamia recipes from around the globe

Macadamias are Australia’s native nut, originating in the ancient eastern rainforests over 60 million years ago. But they are just perfect for incorporating into a range of classic dishes from around the world. Here are our favourite ways to use macadamias with some international flair.

1 – Japan’s favourite pancake

‘Okonomiyaki’ is a classic Japanese savoury pancake. The name itself comes from a Japanese word which means “whatever you like”. Our recipe for these pancakes is ideal as a casual weeknight meal and includes a delicious macadamia version of traditional tonkatsu sauce that adds complexity and crunch to the dish.

2 – Hearty stew from Mexico

In this savoury Mexican-style pork dish, chocolate, raisins and macadamia nuts are just part of the rich sauce that also includes cloves, cinnamon, cumin and chillies in adobo sauce. The green chilli salsa includes macadamia nuts to add some crunch to the heat.

3 – Flavours of the Middle East

Pomegranate molasses, preserved lemon and ras el hanout are just three of the scrumptious Middle Eastern flavours in this special salad. The parsley, mint and cucumber add freshness while the macadamias lift the whole dish with their soft crunch and nutty flavour. 

4 – Spicy Szechuan stir fry

The Szechuan peppercorn is an important spice in Chinese cuisine. It has a unique aroma and flavour and is more citrusy in flavour than either chilli pepper or black pepper. It works perfectly alongside the buttery richness of macadamias in this variation of a traditional Chinese Szechuan Chicken recipe.

5 – Thai Favourites

There’s no need to get takeaway when you can make classic Thai fishcakes at home so easily. Macadamias feature in both the fishcakes and the delicious dipping sauce, alongside the distinctive fresh flavours of coriander, lime and kaffir lime leaves.
