Smoked trout and macadamia spread

Macadamias are used as a base for this simple and delicious spread. It can be whipped up in minutes, stores well in the fridge, and is also a great portable offering.

Ingredients
  

  • 120 g piece smoked trout skin removed
  • 1/4 cup macadamias
  • 2 tbsp lemon juice or to taste

Instructions
 

  • Place all ingredients in the bowl of a food processor and process to combine. Season to taste with salt and black pepper and extra lemon juice if desired. Store in the refrigerator in an airtight container.
  • Serve in a small bowl with fresh or toasted bread and pickled cucumbers.
